I've had this pan for quite a while(read: years) but I've only started to really use it in the last few months.



This pan is a beast. I cook everything with it now for good reason. I have several lower quality pans that I still keep around when I need something more specific, like sauces or the like. But for main dishes, this is the pan I go to bar none. It cooks more evenly with less direct heat than the rest of my collection. General meat cooking for chicken and pork result in very even heating which means that I can cook more stuff on the pan without having to shift everything around all the time to get the "good spot."



Oh and please read what others have been writing about it. It is NOT non-stick. Use butter, margarine, oil or what have you if you are concerned about food sticking to the pan itself. And for the love of god don't put ANY nice cookware into the dishwasher. Use cheaper stuff for the food you aren't really concerned about and toss that into the dishwasher then use this pan for your main dish and hand wash.



All in all though I'm thinking about getting a second one just so that I can do more cooking at the same time without the wait that I do now. Amazing stuff.

I have had this product a few weeeks now and am very unsatisfied. I needed new pots and pans and bought a set of circulon 2 but the frying pans were too small. So I researched and ordered this pan, 12 inch everyday pan by cephalon. The reviews were generally good and cephalon was one of the top recommended brands. Everything sticks to the pan and I expected a flatter pan. This one has rounded sides and seems more for vegetables. Maybe saute' would not stick. I have used it several times hoping it just needed to be seasoned, but still I just don't care for the pan. I just finished making pancakes, only fit 3 small ones in the pan and they stuck even with lots of Pam spray. Maybe I am spoiled with the circulon 2, which is thicker and heavier and doesn't stick. My husband has used the pan too and he seeems to like it and that is the only reason I didn't return it.

This pan has been the workhorse in the kitchen for the last 3 years. Hardly a day goes by that it doesn't get used. The size and shape are very functional for many different things - it is my Chinese stir-fry wok, my paella pan, dutch oven, fry pan, sauce pan. The only things I don't use it for are omelettes and sauteeing delicate fish fillets, as I prefer non-stick for that function. I have learned that with the correct cooking techniques and temperatures, I don't have a problem with sticking while cooking other foods - steaks, chops, etc. It heats evenly and is easy to clean. Can't ask for anything more. The only "problem" I have with it, is that the handles don't provide much leverage when picking it up with one hand to scrape out a sauce, so it's not the ideal sauce pan. But it develops great fond, so even with that drawback, I still prefer it for pan sauces.

I really don't understand how other reviewers gave good reviews on this. I don't know, maybe mine is a defective one. ??? All food stick to the pan and it is hard to clean. This pan may look good, but it is useless. I am going to return it.

 "Bad Quality Control, Thin Layer of "Spray Paint"" 2009-09-24

I ordered this about three weeks ago when it was on sale. Since then, Amazon has sent me two Everyday Pans, each as replacements.



The problem is a quality control issue, seemingly with Calphalon. But Calphalon cannot directly help me. I called them, but because these pans are made in China, Amazon has to replace them. Calphalon cannot issue replacements as they do not have access to them here in the United States.



Each of the two Everyday Pans arrive scratched, or with very small holes in the coating from the manufacturing process. It looks like the entire silver aluminum base has been spray painted with the lightest, thinnest possible coating of the dark material that you see, that material which you think is so indestructible.



Well, it is not indestructible. It is incredibly thin. Each pan I've received has scratches showing the silver underneath, dots where when it was "spray painted" or however they apply this coating in the factory, the coating did not stick to the silver in some places.



Who wants a brand new pan that arrives and already has compromises to the anodized coating?



This is a very poorly made pan. It looks GORGEOUS except for the issues with the coating. It sits on my stovetop and if you do not see the areas where it is scratched, it looks indestructible. It looks like a sturdy pan and has the most marvelous handles. It has a very pleasing shape. It looks like something you can't wait to cook in. It looks wonderful sitting on my stove top, but I am sending it back to Amazon.



If they can ever get their quality control issues resolved, so that I can receive one where the coating is not compromised, I will gladly try to cook in it.



Until then, I will wait.



EDITED TO ADD: Also, I tried to store this in my cabinet. Just the briefest contact with another pot, and I do mean the briefest; it barely touched it -- scratched the exterior so that the silver aluminum underneath shows through. So if I ever did end up with one and used it for cooking, I would be using kid gloves to do so. These are not hardy, sturdy pots as they initially appear.



I had the same exact experience with their 12-quart stockpot. I cannot recommend either until they get their quality control issues under control.
